  1. Chicken Jalfrezi

    Ingredients:
    250g chicken (boiled and shredded)
    1 capsicum cut lengthwise in thin strips
    2 tomatoes cut lengthwise in medium strips
    1 large onion cut lengthwise in medium strips
    1 teaspoon black pepper
    2 teaspoons salt or to taste
    2 tablespoons lemon juice
    1/2 cup oil

    Method:
    Saute oil and onions in a pan on a medium flame. Cook for 2-3 minutes
    Add capsicum and cook for 2-3 more minutes. Keep stirring.
    Add chicken and salt and stir well.
    Add tomatoes and mix well. Cover and let it cook for few minutes until the water dries.
    Add black pepper and lemon juice. Mix well and serve.

    Note: I serve it wit thinly made chappatis.

    Ingredients:
    3 garlic cloves, crushed
    2 tablespoons vegetable oil
    2 cups long-grain rice. soaked in water
    4 cups water
    2 teaspoons salt or to taste

    Method:
    Saute the garlic cloves in hot oil in a large saucepan over medium-high heat for 2-3 minutes
    Add rice, and saute for one minute
    Stir in 4 cups of water and salt; bring to boil
    Cover, reduce heat to low, and simmer 30 minutes.
    Do not uncover rice until time is up
    Remove from heat, let stand 5 minutes
    fluff with fork

    Advice: when halving the recipe instead of two cups add 2 and half cups of water
